Olive Chicken

Olive Chicken -

A tasty, lemony, Moroccan dish that goes well with rice or couscous. Note: Be careful with the salt as the olives are already salty.

Ingredients:

 1 (2 to 3 pound) whole chicken, cut into pieces
 2 tablespoons vegetable oil
 2 onions, chopped
 salt to taste
 ground black pepper to taste
 1/2 teaspoon ground ginger
 1/2 teaspoon paprika
 1 pound pitted green olives
 1 lemon, juiced
 2 cups water

Directions:

Heat oil in a large saute pan. Add onions, and sprinkle with ginger and paprika. Saute until onions are golden.
Place chicken on top of onions. Add about 1 to 2 cups of water, lemon juice, salt, pepper, and olives. Cook about 1 hour, or until the chicken is tender.
Serve over rice or couscous.
