Doi Potol (Pointed Gourd in Curd)

Doi Potol (Pointed Gourd in Curd) -

This is an authentic Bengali dish made of Pointed Gourd, that is very easy to prepare and the taste is just mind blowing.

Ingredients: 

8 nos. padwals/Pointed Gourd/potol (slit vertically into half or cut across the edges)
1 tsp. turmeric powder
1 tsp. red chilli powder
1 tsp. cumin powder
1 tsp. yoghurt/curd (beaten)
1 tsp. cumin seeds
4 tbsp. mustard oil
1 tsp. ginger, grated
1 tsp. sugar
Salt to taste

Method:

Apply half a tsp of turmeric powder and salt to the slit padwals.
Heat oil in a pan and deep fry the padwals until brown in colour.
Drain and keep aside.
In the same oil, add the cumin seeds and grated ginger. Saute for a minute.
Add the spices, sugar, salt and the beaten yoghurt. Mix well.
Let it simmer till the oil leaves the sides of the pan.
Add the fried padwals again to the mixture and add half a cup of water to it.
Allow it to simmer till the gravy thickens.
Serve hot with luchis (puris) or parathas or roti or chapati.
