Labra (Bengali style mix Vegetable)

Labra (Bengali style mix Vegetable) -

Labra is again one of the traditional Bengali dishes once cooked widely in festivals, pujas and ceremonies where veg dishes were mandatory. Its gradually getting lost and now a days its not included in ceremonies any more. Its easy and fast cooking and offers a distinct taste to the Bengali palate.

Ingredients:

Take 250 gms of all veggies. Everything is must in the list below-
Red pumpkin
Cabbage
Cauliflower stem
Mulo/ Raddish
Baigon / Egg plant
Potatoes
Misti Alu / Sweet potatoes

1 1/2 tsp Panch phoran (Panch phoron is a mixture of 5 spices in equal amount - Cumin seeds, Fennel seeds, Nigella seeds, Fenugreek seeds, Mustard seeds)
2-3 dried red chillies – you can break them in half and remove seeds to avoid indigestion.
4-6 Green chillies
1 tsp Turmeric powder
1 1/2 tsp Ginger paste
Mustard oil – more the better – 8 to 10  tbsp
1 1/2 tsp Sugar
Salt to taste

Directions:

Wash the vegetables lightly and dice them into medium sizes pieces. Heat oil in a pan / skillet ( best is iron kadai) and put panch phoran and red chilies. Fry them but don't burn the chillies. Add the vegetables, mix well and stir fry for a few minutes on medium heat. Mix salt, sugar and green chillies and cook it for 5-6 minutes. Add a few drops of raw mustard oil and keep covered.

Serve it with rice or Khichdi or roti or paratha.
