Ingredients:
450 g (1 lb) strawberries, hulled
2 tablespoons fresh orange juice
450 ml (3/4 pint natural low-fat yogurt
crushed ice
450 ml (3/4 pint) low-calorie dry ginger ale
red food colouring
ground ginger
Method:
Reserve 4 strawberries. Put the remaining strawberries, orange juice and yogurt in a blender with some crushed ice and blend on maximum speed for 30 seconds.
Divide between four tumblers. Add the dry ginger ale and a little red food colouring and stir. Sprinkle a little ginger on top and decorate each glass with one of the reserved strawberries.
Red-skinned Victoria plums can be used as an alternative to the strawberries to make an equally delicious summer drink. Try sprinkling a little
cinnamon on top of each glass instead of the ground ginger.
