Hara Bhara Kebabs

Hara Bhara Kebabs -

This starter or party nibble tastes even better with a chutney made from yoghurt, crushed mint leaves and chopped green chillies.

Ingredients:

3-4 medium sized boiled potatoes
100g boiled garden peas
100g spinach
2-3 chopped green chillies
2 tablespoons chopped coriander
1 tablespoon ginger paste
chaat masala to taste
salt to taste
2 tablespoons cornflour
oil for frying

Method:

Mash the boiled potatoes together with the peas.
Blanch spinach in hot water. Transfer to cold water. (This stops the cooking process and retains the fresh green colour.)
Mix spinach with the potato-pea mixture. Add chillies, coriander, ginger, chaat masala and salt. Add cornflour for binding.
Divide into 25 equal portions and shape them into flat patties. Deep fry or shallow fry until crispy.

Chaat masala is an Indian spice mix, widely available in Indian shops.
