Punjabi Fried Paneer

Punjabi Fried Paneer -

Paneer cubes stuffed with red chilli-garlic chutney, dipped in yogurt-maida batter, coated with spicy cornflakes powder and deep fried.

Ingredients:

Paneer (cottage cheese) 250 grams
Yogurt 1 cup
Refined flour (maida) 5 tablespoons
Salt to taste
Corn flakes 1 1/2 cups
Soda bicarbonate a pinch
Red chilli powder 1 tablespoon
Green cardamom powder 1/4 teaspoon
Dry mango powder (amchur) 1/2 teaspoon
Carom seeds (ajwain) 1/2 teaspoon
Ginger-garlic paste,diluted in ¼ cup water 1 tablespoon
Red chilli Garlic Chutney as required
Oil to deep fry
Chaat masala a pinch
Fresh mint leaves a few for garnishing

Method:

Heat oil in a kadai or pan.
Whisk together yogurt and 2 tbsps maida in a bowl. Add salt and mix well and set aside.
Grind together cornflakes, 3 tbsps refined flour, soda bicarbonate, red chilli powder, green cardamom powder, dried mango powder and carom seeds.
Cut paneer into 1 inch cubes and slit in the centre. Pour the ginger-garlic water over the cottage cheese cubes.
Stuff red chilli-garlic chutney into the slits of the paneer cubes. Dip the cottage cheese cubes in the yogurt-refined flour mixture. Coat them with the corn flakes mixture.
Deep fry the cottage cheese pieces in the hot oil till golden brown and crisp. Drain on absorbent paper.
Transfer onto a serving plate, sprinkle chaat masala, garnish with mint leaves and serve hot.
