Pork Enchiladas

One of the efficient ways to use up leftover pork.

Ingredients:
 2 cups shredded cooked pork
 1 (10 ounce) can enchilada sauce
 1/2 teaspoon onion powder
 1 cup reduced fat sour cream
 1 (4 ounce) can chopped green chilies
 2 cups shredded Colby-Monterey Jack cheese
 1 (10.75 ounce) can condensed tomato soup
 1/4 teaspoon garlic powder
 1/2 teaspoon ground cumin
 6 (7 inch) flour tortillas

Directions:
Preheat an oven to 350 degrees F (175 degrees C).
Combine cooked pork, enchilada sauce, onion powder, 1/2 cup sour cream, green chilies, and one cup of the shredded cheese in a large bowl. In a separate bowl, stir together tomato soup, remaining 1/2 cup sour cream, garlic powder, and cumin.
Pour a thin layer of the tomato soup mixture into a 9x13 baking dish. Spread pork mixture down the center of each tortilla. Roll tortillas to enclose filling; place seam side down in the baking dish. Pour the remaining soup mixture over the filled tortillas. Top with the remaining 1 cup cheese.
Bake in preheated oven until hot and bubbly, about 30 minutes.

Jalapeno Cream Cheese Chicken Enchiladas

Ingredients:
 3 skinless, boneless chicken breast halves
 1 teaspoon cayenne pepper
 1/2 teaspoon garlic powder
 salt and ground black pepper to taste
 2 tablespoons butter
 1 large onion, minced
 2 jalapeno peppers, seeded and minced (wear gloves)
 1 (8 ounce) package cream cheese
 1/2 teaspoon cayenne pepper
 1 tablespoon garlic powder
 1/2 teaspoon paprika
 1/2 teaspoon chili powder
 1/2 teaspoon ground cumin
 1 (28 ounce) can green enchilada sauce
 7 flour tortillas
 8 ounces shredded Monterey Jack cheese, divided

Directions:
Preheat oven to 350 degrees F (175 degrees C).
Season chicken breasts with 1 teaspoon of cayenne pepper, 1/2 teaspoon of garlic powder, salt, and black pepper. Place into a baking dish.
Bake in the preheated oven until the chicken is no longer pink inside and the juices run clear, about 45 minutes. Allow chicken to cool, and shred with 2 forks. Set chicken aside.
Heat butter in a large nonstick skillet over medium heat, and cook the onion and jalapenos until the onion is translucent, about 5 minutes; stir in the cream cheese in chunks, and allow cream cheese to melt and soften. Stir the cream cheese into the vegetables, and mix in 1/2 teaspoon of cayenne pepper, 1 tablespoon of garlic powder, the paprika, chili powder, and cumin. Mix in the cooked chicken meat; remove from heat.
Pour half the green enchilada sauce into the bottom of a 9x13-inch baking dish. Lay tortillas out onto a work surface, and place chicken mixture in a line down the center of each tortilla; sprinkle with about 1 tablespoon of Monterey Jack cheese per tortilla. Roll up the tortillas, and place into the sauce in the dish, seam sides down; pour the remaining sauce over the enchiladas. Sprinkle remaining 4 ounces of Monterey Jack cheese over the top.
Bake in the preheated oven until the filling is hot and bubbling and the cheese has melted, 30 to 35 minutes.

Easy White Chicken Enchiladas

This is a great 'guy' recipe, because you simply mix, assemble, top and bake; and it's a big hit on the table. It doesn't require lots of prep work, just a minimum of measuring of ingredients found in any grocery store. She will think you slaved all afternoon!

Ingredients:
 4 ounces cream cheese, softened
 1/2 cup sour cream
 1/2 cup green salsa
 2 (6 ounce) packages seasoned cooked chicken cubes
 1 cup shredded Mexican-style cheese blend
 1 1/2 cups white cheese sauce, or queso dip
 6 (8 inch) flour tortillas

Directions:
Preheat oven to 375 degrees F (190 degrees C). Lightly spray an 8x8-inch glass baking dish with cooking spray.
Stir together the softened cream cheese, sour cream, and salsa until blended. Fold in chicken and shredded cheese. Spread a small amount of white cheese sauce onto the bottom of the baking dish. Evenly divide the filling among the tortillas, and roll into firm cylinders. Place into prepared baking dish and cover with remaining sauce.
Bake in preheated oven until golden and bubbly, about 30 minutes. Allow to rest 5 minutes before serving.

Turkey Enchiladas

These enchiladas are a great way to use leftover Thanksgiving turkey. Serve with sour cream and refried beans if desired.

Ingredients:
 2 cups shredded Cheddar and Monterey cheese blend
 1 onion, chopped
 1 (2 ounce) can sliced black olives
 24 (6 inch) corn tortillas
 1 (19 ounce) can red enchilada sauce
 4 cups cooked turkey, chopped

Directions:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
In a small bowl, combine the cheese, onion, and black olives.
In a small skillet, heat enough oil to lightly coat one tortilla, and cook until soft. Remove and dip in enchilada sauce to coat.
Add turkey and cheese mixture to center of tortilla, roll and place in the prepared dish. Repeat until bottom layer of pan is covered with enchiladas. Spread enough sauce over bottom layer to cover.
Repeat process with a second layer; spread remaining sauce on top and sprinkle with remaining cheese mixture. Bake 20 minutes in the preheated oven, or until cheese is melted.

Pineapple Enchiladas

If you like pineapple on pizza, you love this!

Ingredients:
 1 (20 ounce) can crushed pineapple
 1/4 cup sour cream
 2 cups shredded Cheddar cheese, divided
 1 (10 ounce) can enchilada sauce, divided
 6 (8 inch) flour tortillas

Directions:
Preheat oven to 375 degrees F (190 degrees C).
In a medium bowl combine pineapple, sour cream and 1 cup cheese.
Pour 1/4 cup enchilada sauce in the bottom of a 9 x 13 inch baking dish.
Fill tortillas with pineapple mixture, roll and place in baking dish. Pour on remaining enchilada sauce and sprinkle with remaining cheese.
Bake, covered, in preheated oven for 30 minutes.

Seafood Enchiladas

These crab and shrimp stuffed enchiladas taste like the ones served at a popular Mexican restaurant in my area. My husband just loves them. After sprinkling the cheese over the enchiladas before baking, you can also garnish with tomatoes, cilantro, olive slices, or whatever other garnish you enjoy.

Ingredients:
 1 onion, chopped
 1 tablespoon butter
 1/2 pound fresh crabmeat
 1/4 pound shrimp - peeled, deveined and coarsely chopped
 8 ounces Colby cheese
 6 (10 inch) flour tortillas
 1 cup half-and-half cream
 1/2 cup sour cream
 1/4 cup butter, melted
 1 1/2 teaspoons dried parsley
 1/2 teaspoon garlic salt

Directions:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onions in 1 tablespoon butter until transparent. Remove the skillet from heat and stir in crabmeat and shrimp. Shred the cheese and mix half of it into the seafood. Place a large spoonful of the mixture into each tortilla. Roll the tortillas up around the mixture and arrange the rolled tortillas in a 9x13 inch baking dish.
In a saucepan over medium-low heat, combine half-and-half, sour cream, 1/4 cup butter, parsley and garlic salt. Stir until the mixture is lukewarm and blended. Pour sauce over the enchiladas, and sprinkle with remaining cheese.
Bake in preheated oven for 30 minutes.

Cottage Cheese Chicken Enchiladas

Ever tried chicken enchiladas made with cottage cheese? Now's your chance! This takes some prep time, but it is well worth it. You can make it 1 day ahead, and serve the next day.

Ingredients:
 1 tablespoon vegetable oil
 2 skinless, boneless chicken breast halves - boiled and shredded
 1/2 cup chopped onion
 1 (7 ounce) can chopped green chile peppers
 1 (1 ounce) package taco seasoning mix
 1/2 cup sour cream
 2 cups cottage cheese
 1 teaspoon salt
 1 pinch ground black pepper
 12 (6 inch) corn tortillas
 2 cups shredded Monterey Jack cheese
 1 (10 ounce) can red enchilada sauce

Directions:
To Make Meat Mixture: Heat oil in medium skillet over medium high heat. Add chicken, onion and green chile peppers and saute until browned, then add taco seasoning and prepare meat mixture according to package directions.
To Make Cheese Mixture: In a medium bowl mix sour cream with cottage cheese and season with salt and pepper; stir until well blended.
Preheat oven to 350 degrees F (175 degrees C).
To Assemble Enchiladas: Heat tortillas until soft. In each tortilla place a spoonful of meat mixture, a spoonful of cheese mixture and a bit of shredded cheese. Roll tortillas and place in a lightly greased 9x13 inch baking dish. Top with any remaining meat and cheese mixture, enchilada sauce and remaining shredded cheese.
Bake at 350 degrees F (175 degrees C) for 30 minutes or until cheese is melted and bubbly.

Poblano Chile Enchiladas a la Gringa

Prepare for your taste buds to jump for joy!

Ingredients:
 2 (8 ounce) skinless, boneless chicken breast halves
 2 tablespoons minced garlic
 1 medium onion, chopped
 3 cups water
 1 tablespoon chicken bouillon granules
 4 fresh poblano chilies
 1 (8 ounce) container sour cream
 2 tablespoons olive oil
 10 (6 inch) corn tortillas
 1 cup shredded mozzarella cheese

Directions:
Place the chicken breasts, garlic, onion, water, and chicken bouillon into a saucepan. Bring to a boil, then reduce heat to medium-low and simmer for 40 minutes. When finished, remove the chicken to a plate to cool. Measure out 1 cup of the chicken broth and discard the rest.
Roast the poblano chiles over an open flame, or underneath a broiler until the skin has blackened on all sides. Place the chiles into a plastic bag, or a bowl covered with plastic wrap, and allow to steam as they cool, about 30 minutes. When cool, peel the blackened skin off of the pepper, and remove the seeds and membrane.
Place the reserved chicken broth into a blender along with the roasted poblanos and sour cream. Puree until smooth and set aside.
Heat the olive oil in a skillet over medium heat. Fry the tortillas one at a time until softened and beginning to crisp. Place onto a plate and set aside. Pour the pureed poblano mixture into the skillet and simmer for 10 minutes. While the sauce is cooking, slice the cooled chicken breasts into 1/4 inch strips.
Using tongs, dip a tortilla into the sauce, coating both sides. Place some of the chicken in the center of the tortilla, roll tightly, then place on a serving dish with the seam side down. Repeat with remaining tortillas. Spoon any remaining sauce over top of the enchiladas, then sprinkle with the shredded mozzarella cheese.

Black Bean and Rice Enchiladas

These vegetarian black bean and rice enchiladas are just as satisfying as those served in restaurants.

Ingredients:
 1 tablespoon olive oil
 1 green bell pepper, chopped
 1 onion, chopped
 3 cloves garlic, minced
 1 (15 ounce) can black beans, rinsed and drained
 1 (14.5 ounce) can diced tomatoes and green chilies
 1/4 cup picante sauce
 1 tablespoon chili powder
 1 teaspoon ground cumin
 1/4 teaspoon red pepper flakes
 2 cups cooked brown rice
 8 (6 inch) flour tortillas, warmed
 1 cup salsa
 1 cup shredded Cheddar cheese
 3 tablespoons chopped fresh cilantro leaves
 1/4 cup shredded Cheddar cheese

Directions:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
Heat oil in a large skillet over medium heat; cook and stir green pepper, onion, and garlic until tender, about 7 minutes. Stir in beans, tomatoes, picante sauce, chili powder, cumin, and red pepper flakes; bring to a boil. Reduce heat to low and simmer, uncovered, until heated through and mixture thickens, about 5 minutes. Fold in rice and 1 cup Cheddar cheese; cook until heated through, about 5 minutes.
Spoon a rounded 1/2 cup bean mixture down the center of each tortilla. Fold sides over filling and roll up. Place enchiladas seam side down in baking dish; spoon salsa over each tortilla. Cover baking dish with aluminum foil.
Bake in preheated oven for 25 minutes. Uncover and sprinkle with cilantro and 1/4 cup Cheddar cheese. Bake until cheese is melted, 2 to 3 minutes.

Spinach Enchiladas

If you like spinach and Mexican food, you'll love these easy vegetarian enchiladas made with ricotta cheese and spinach.

Ingredients:
 1 tablespoon butter
 1/2 cup sliced green onions
 2 cloves garlic, minced
 1 (10 ounce) package frozen chopped spinach , thawed, drained and squeezed dry
 1 cup ricotta cheese
 1/2 cup sour cream
 2 cups shredded Monterey Jack cheese
 10 (6 inch) corn tortillas
 1 (19 ounce) can enchilada sauce

Directions:
Preheat the oven to 375 degrees F (190 degrees C).
Melt butter in a saucepan over medium heat. Add garlic and onion; cook for a few minutes until fragrant, but not brown. Stir in spinach, and cook for about 5 more minutes. Remove from the heat, and mix in ricotta cheese, sour cream, and 1 cup of Monterey Jack cheese.
In a skillet over medium heat, warm tortillas one at a time until flexible, about 15 seconds. Spoon about 1/4 cup of the spinach mixture onto the center of each tortilla. Roll up, and place seam side down in a 9x13 inch baking dish. Pour enchilada sauce over the top, and sprinkle with the remaining cup of Monterey Jack.
Bake for 15 to 20 minutes in the preheated oven, until sauce is bubbling and cheese is lightly browned at the edges.

Slow Cooker Enchiladas

An old Mexican classic with a new twist. Can be made with chicken or beef.

Ingredients:
 1 pound lean ground beef
 10 (6 inch) corn tortillas, quartered
 1 (1 ounce) package taco seasoning mix
 1 1/4 cups water
 1 (12 ounce) jar chunky salsa
 1 (10.75 ounce) can condensed cream of mushroom soup
 1 (10.75 ounce) can condensed cream of chicken soup
 4 cups shredded Mexican cheese blend

Directions:
Crumble the ground beef into a skillet over medium-high heat. Cook and stir until evenly browned. Add taco seasoning and water; simmer for 15 minutes over low heat.
In a medium bowl, stir together the salsa, cream of mushroom soup and cream of chicken soup. Mix in most of the cheese, reserving 3/4 cup for later.
Place a layer of tortillas covering the bottom of a slow cooker. Scoop a layer of the ground beef over that, and then spoon a layer of the cheese mixture. Repeat the layers until you run out of stuff, ending with a layer of tortillas on the top. Top with remaining cheese.
Cover, and cook on High for 45 minutes to 1 hour.

Shrimp and Crab Enchiladas

Enchiladas made with shrimp, crab and Jack cheese. This is a great dish with a Southwestern flair.

Ingredients:
 12 (12 inch) flour tortillas
 8 ounces Monterey Jack cheese, shredded
 1 (6 ounce) can crab meat, drained
 1 pound cooked medium shrimp, shelled and deveined
 1 (20 ounce) can green enchilada sauce
 1 (8 ounce) container sour cream
 1 bunch green onions, chopped

Directions:
Preheat oven to 350 degrees F (175 degrees C).
Lay tortillas on a flat surface. In the middle of each tortilla place equal amounts of cheese, crab, and shrimp. Set aside some cheese to sprinkle on top of the tortillas. Roll the tortillas to form enchiladas. Arrange side by side in a 9x13 inch baking pan.
Pour green enchilada sauce over all of the enchiladas; the green sauce should cover the enchiladas completely. Sprinkle the remaining cheese over the enchiladas.
Cover, and bake for 30 minutes in the preheated oven. Remove cover, and continue baking 15 minutes. Top enchiladas with sour cream and green onions to serve.

Green Chicken Enchilada

Very easy to make! Chicken and Monterey Jack Cheese filled flour tortillas topped with green enchilada sauce. Make Mexican Rice to serve on the side.

Ingredients:
 1 pound skinless, boneless chicken breast halves
 12 (10 inch) flour tortillas
 1 (8 ounce) package shredded Monterey Jack cheese
 1 (19 ounce) can green enchilada sauce

Directions:
In a pot with enough water to cover, boil the chicken 25 minutes, or until juices run clear. Drain, cool, and shred.
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
Fill each tortilla with equal amounts of chicken and cheese, reserving 1/4 cup cheese for topping. Roll tortillas to form enchiladas. Arrange enchiladas in the prepared baking dish. Cover with the enchilada sauce.
Bake enchiladas 30 minutes in the preheated oven. Top with reserved cheese, and continue baking 5 minutes, until cheese is melted.
