Crispy Fried Chicken

Crispy Fried Chicken -

INGREDIENTS:

1 1/2 - 2 lbs chicken, cut into pieces
2 eggs, beaten
1 cup self-rising flour
1/2 tsp pepper
1 tsp salt
Oil, for frying, preferably peanut oil

DIRECTIONS:

Season the chicken with salt and pepper.
Dip the seasoned chicken in the egg, and then coat well with flour.
Heat the oil to 350 degrees F in a deep pot. Do not fill the pot more than 1/2 full with oil.
Deep fry in oil until crisp and brown. Enjoy!
