An alcoholic beverage is a drink that contains ethanol. Alcoholic beverages are divided into three general classes for taxation and regulation of production: Beers, Wines, and Spirits (distilled beverages). They are legally consumed in most countries around the world. More than 100 countries have laws regulating their production, sale, and consumption.Alcoholic beverages have been consumed by humans since the Neolithic era; the earliest evidence of alcohol was discovered in Jiahu, dating from 7000–6600 BC. The production and consumption of alcohol occurs in most cultures of the world, from hunter-gatherer peoples to nation-states.
Alcoholic beverages are a source of food energy. The USDA uses a figure of 6.93 kcal per gram of alcohol (5.47 kcal per ml) for calculating food energy.

A cocktail is a kind of alcoholic mixed drink that contains two or more ingredients. As generally understood today, a cocktail requires at least one alcoholic component—typically a distilled spirit (such as gin, brandy, vodka, whiskey, tequila, or rum), although beer and wine are permissible—and one sweet component; it may also contain a souring or bittering ingredient. The completed cocktail is almost always garnished with fruit.Cocktails were originally a mixture of spirits, sugar, water, and bitters. The term is now often used for almost any mixed drink that contains alcohol, including mixers, mixed shots, etc. A cocktail today usually contains one or more kinds of spirit and one or more mixers, such as soda or fruit juice. Additional ingredients may be sugar, honey, milk, cream, and various herbs.

Wine -
Wine is an alcoholic beverage made from fermented grapes or other fruits. The natural chemical balance of grapes lets them ferment without the addition of sugars, acids, enzymes, water, or other nutrients. Yeast consumes the sugars in the grapes and converts them into alcohol and carbon dioxide. Different varieties of grapes and strains of yeasts produce different styles of wine. The well-known variations result from the very complex interactions between the biochemical development of the fruit, reactions involved in fermentation, terroir and subsequent appellation, along with human intervention in the overall process. The final product may contain tens of thousands of chemical compounds in amounts varying from a few percent to a few parts per billion.Wines made from produce besides grapes are usually named after the product from which they are produced (for example, rice wine, pomegranate wine, apple wine and elderberry wine) and are generically called fruit wine. The term "wine" can also refer to starch-fermented or fortified beverages having higher alcohol content, such as barley wine, huangjiu, or sake.
Wine has a rich history dating back thousands of years, with the earliest production so far discovered having occurred c. 6000 BC in Georgia. It had reached the Balkans by c. 4500 BC and was consumed and celebrated in ancient Greece and Rome.
From its earliest appearance in written records, wine has also played an important role in religion. Red wine was closely associated with blood by the ancient Egyptians, who, according to Plutarch, avoided its free consumption as late as the 7th-century BC Saite dynasty, "thinking it to be the blood of those who had once battled against the gods". The Greek cult and mysteries of Dionysus, carried on by the Romans in their Bacchanalia, were the origins of western theater. Judaism incorporates it in the Kiddush and Christianity in its Eucharist, while alcohol consumption was forbidden in Islam.

All wines can be organized into five fundamental groups. Within each group there are hundreds of different grape varieties and also different wine making styles.
Red Wine -
Still wine made with black grapes. These can range from light to dark and bone-dry to sweet.White Wine -
A still wine produced from green and sometimes black grapes. Flavors span from rich and creamy to light and zesty.Rosé Wine -
Still wine from black grapes produced by removing the skins before they deeply color the wine. Also formed by blending red and white wine together. Both dry and sweet styles of rosé are common.Sparkling Wine -
A style of wine making involving a secondary fermentation causing bubbles! Sparkling wine can be red, white or rosé and can range from minerally to rich and sweet.Fortified Wine -
A style of wine making involving fortifying wine with spirits. Typically a dessert wine, but many dry-style fortified wines exist such as dry Sherry.In this section I have given the simplest and easiest process of making wines.

Brewing is the production of beer through steeping a starch source (commonly cereal grains) in water and then fermenting with yeast. It is done in a brewery by a brewer, and the brewing industry is part of most western economies. Brewing has taken place since around the 6th millennium BC, and archaeological evidence suggests that this technique was used in most emerging civilizations including ancient Egypt and Mesopotamia.
The basic ingredients of beer are water; a starch source, such as malted barley, which is able to be fermented (converted into alcohol); a brewer's yeast to induce fermentation; and a flavouring, such as hops. A secondary starch source (an adjunct) may be used, such as maize (corn), rice or sugar. Less widely used starch sources include millet, sorghum and cassava root in Africa, potato in Brazil, and agave in Mexico, among others. The amount of each starch source in a beer recipe is collectively called the grain bill.
There are several steps in the brewing process, which include malting, milling, mashing, lautering, boiling, fermenting, conditioning, filtering, and packaging. There are three main fermentation methods, warm, cool and wild or spontaneous. Fermentation may take place in open or closed vessels. There may be a secondary fermentation that can take place in the brewery, in the cask, or in the bottle.
Home-brewing
Home-brewing is the brewing of beer, wine, sake, mead, cider, perry and other beverages through fermentation on a small scale as a hobby for personal consumption, free distribution at social gatherings, amateur brewing competitions or other non-commercial reasons. Both alcoholic and non-alcoholic beverages can be made at home.
Brewing on a domestic level has been done for thousands of years, but has been subject to regulation and prohibition during some time periods in certain places. Restrictions on home-brewing were lifted in the UK in 1963, Australia followed suit in 1972, and the USA in 1978, though individual states were allowed to pass their own laws limiting production. In some countries such as New Zealand, home-brewing beer or wine has always been legal.
The legality of home-brewing varies from country to country, and some countries limit the volume an individual can legally brew. Fewer countries allow distillation of alcohol in the home.
