Whipped Hot Chocolate
A simple twist to hot chocolate.
Ingredients:
1 cup milk
1/3 cup white sugar
2 tablespoons sweetened cocoa powder
1 teaspoon vanilla extract
1 pinch salt
2 (1 ounce) squares semisweet baking chocolate, broken into pieces
1 cup heavy cream
Directions:
Heat milk in a small saucepan over low heat until the milk begins to steam. Whisk in the sugar, cocoa powder, vanilla extract, and salt until dissolved. Stir in the chocolate until melted. Remove saucepan from heat, and allow to cool slightly.
Beat the heavy cream in large mixing bowl with an electric mixer until stiff peaks form. Gently fold the whipped cream into the hot chocolate. Serve immediately.

1/2 teaspoon brown sugar
1/2 teaspoon maple syrup
1/2 teaspoon vanilla extract
1/2 teaspoon honey
3 1/2 tablespoons unsweetened cocoa powder
1/2 cup milk
Directions:
Heat 2 1/2 cups milk in a saucepan over medium heat until steaming, about 5 minutes. Stir in brown sugar, maple syrup, honey, and vanilla extract. Bring to boil and stir in cocoa powder. Remove from heat and add the remaining 1/2 cup milk. Return saucepan over heat and simmer until heated through, about 2 minutes more. Ladle into cups to serve.

1/2 teaspoon ground cinnamon
1 pinch chili powder
1/4 cup milk
3/4 cup boiling water
Directions:
In a large mug, mix the hot chocolate mix, chocolate syrup, cinnamon, and chili powder. Pour in the milk. Add the boiling water and stir.

2 teaspoons instant coffee
6 ounces chopped bittersweet chocolate (reserve some for drink garnish)
10 pieces Werther's Original Caramels, unwrapped
1/2 cup whipped cream
Directions:
Heat milk, sugar and coffee in a medium saucepot over medium-high heat until boiling. Reduce heat to low and add caramels. Stir frequently until the caramels have completely melted. Pour into mugs or cups and top with whipped cream and chocolate.
