Corned Beef Quesadillas

These are absolutely delicious and are a great way to serve up your leftover brisket!

Ingredients:
 1/2 cup leftover corned beef brisket, shredded
 2 (8 inch) flour tortillas
 1/2 cup shredded Monterey Jack cheese
 2 tablespoons diced green chilies

Directions:
Warm corned beef in a small bowl in microwave on High, 30 seconds to 1 minute.
Heat a skillet over medium heat. Place 1 tortilla in the hot skillet. Sprinkle with Monterey Jack cheese, corned beef, and green chilies.
Top with the other tortilla. Heat until bottom tortilla is golden brown, 2 to 4 minutes . Carefully flip and heat until other side is golden brown and cheese is melted, 2 to 4 minutes. Cut in half to serve.

Vegetable Quesadillas

Delicious quesadillas with cheese and steamed vegetables like broccoli, carrot, bell pepper and mushrooms.

Ingredients:
 1 zucchini, cubed
 1 head fresh broccoli, chopped
 1 red bell pepper, chopped
 1 carrot, chopped
 1 yellow onion, chopped
 4 small button mushrooms, chopped
 4 (10 inch) flour tortillas
 1/2 cup shredded sharp Cheddar cheese
 1/2 cup shredded Monterey Jack cheese

Directions:
Preheat oven to broil. Line a baking sheet with aluminum foil.
Place zucchini, broccoli, bell pepper, carrot, onion and mushrooms in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain.
Place two tortillas, side by side, on the prepared baking sheet. On each tortilla layer cheddar cheese, vegetables, then Monterey jack cheese. Top each with another tortilla.
Place under the broiler and cook until lightly browned. Carefully turn tortillas and cook on the other side until lightly browned.

Tangy Tuna Black Bean Quesadillas

This is a delicious quesadilla recipe using ingredients like low-fat sour cream, refried black beans, and whole-wheat tortillas. It's so easy to put together in less than 20 minutes and it tastes fabulous! Feel free to serve with salsa and sour cream for dipping.

Ingredients:
 2 (6 ounce) cans tuna, drained
 1/2 cup refried black beans
 1/2 cup low-fat sour cream
 1/2 cup canned sweet corn, drained
 2 tablespoons hot buffalo wing sauce
 1 tablespoon garlic salt
 1 teaspoon ground cumin
 1 tablespoon butter, divided (optional)
 4 (9 inch) tortillas whole-wheat tortillas
 1/2 cup shredded Mexican cheese blend, divided

Directions:
Mix tuna, black beans, and sour cream together in a large bowl. Stir corn, buffalo wing sauce, garlic salt, and cumin into tuna mixture.
Melt half the butter in a large skillet over medium heat; heat 1 tortilla in melted butter for 1 minute and flip. Spread half the tuna mixture over heated tortilla. Sprinkle with half the Mexican cheese; cover with another tortilla. Place a lid on the skillet and cook for 1 minute.
Flip the quesadilla, cover, and cook until cheese is melted, 1 to 2 minutes. Repeat with remaining butter, tortillas, and filling. Slice quesadilla into eighths and serve a half quesadilla to each guest.

Mashed Potato Quesadilla

This recipe can really be played up with just about anything you like with potatoes! This can be a super fast meal if you use the heat and serve bacon and premade mashed potatoes!

Ingredients:
 2 cups mashed potatoes
 6 slices cooked bacon, crumbled
 1/4 cup sliced green onions
 8 flour tortillas
 2 cups shredded Cheddar cheese
 2 tablespoons softened butter
 1 cup salsa
 1/4 cup sour cream

Directions:
Stir together the mashed potatoes, bacon, and green onions. Spread the mashed potato mixture onto one side of half of the tortillas, spreading to within 1/2 inch of the edges. Sprinkle the shredded cheese on top of the mashed potatoes and top with the remaining tortillas. Lightly butter each side of the quesadillas.
Preheat a large skillet over medium heat. Place a quesadilla into the preheated pan, and cook until golden brown and crispy, then turn over, and continue cooking on the other side until browned, 2 to 3 minutes per side. Repeat with remaining quesadillas. Serve with salsa and sour cream.

Spinach Whole Wheat Quesadillas

This is a super quick, easy, and light dinner. This also makes a great snack or appetizer. It looks like a lot of spinach at first, but it shrinks down a lot in no time during cooking. Other types of tortillas can be used if whole wheat isn't available. Serve with salsa and sour cream.

Ingredients:
 2 (10 inch) whole wheat tortillas
 3 cups fresh spinach leaves
 2/3 cup shredded Cheddar cheese
 1 green onion, chopped
 1/2 teaspoon garlic powder
 1/2 teaspoon chili powder

Directions:
Heat a large non-stick skillet over medium-high heat. Place 1 tortilla onto the skillet. Sprinkle about half the Cheddar cheese evenly over the tortilla. Top with the spinach, green onions, garlic powder, and chili powder. Cover with the remaining Cheddar cheese. Place the second tortilla on top.
Cook until the bottom tortilla starts to develop a bit of color and starts to crisp, about 3 minutes. To flip and cook the other side, slide the quesadilla off the non-stick pan onto a dinner plate, cover with another dinner plate and flip. The crispy tortilla side should now be on top. Slide the quesadilla back onto the pan and cook until the bottom tortilla starts turning crisp, about 3 minutes more. Slide onto a cutting board, and cut into 8 wedges to serve.

Asparagus and Goat Cheese Quesadillas

Easy and elegant quesadillas made with fresh asparagus and soft goat cheese. A royal combination of flavors for that Southwestern fix. Perfect for family meals and fancy enough for guests. Delicious!

Ingredients:
 2 tablespoons extra virgin olive oil, divided
 1/2 pound fresh asparagus, cut into 1 1/2 inch pieces
 salt and pepper to taste
 2 (10 inch) flour tortillas
 4 ounces herbed goat cheese
 1/4 cup chopped fresh cilantro
 fresh cilantro sprigs, for garnish

Directions:
Heat 1 tablespoon olive oil in a skillet over medium-low heat, and cook the asparagus, stirring occasionally, until tender and lightly browned. Season with salt and pepper, and remove from heat.
Spread one side of each tortilla with 1/2 the goat cheese. Place 1/2 the asparagus and 1/2 the cilantro on each tortilla, and fold tortillas in half over contents to form quesadillas. Brush the outsides of the quesadillas with remaining oil.
Place the quesadillas in a skillet over medium-low heat, and cook 3 minutes on each side, or until lightly browned. Cut in half and garnish with cilantro to serve.

Spinach and Mushroom Quesadillas

Flour tortillas filled with creamy Cheddar cheese, portabella mushrooms, and spinach. Cut in fours and serve with guacamole and sour cream. Enjoy!

Ingredients:
 1 (10 ounce) package chopped spinach
 2 cups shredded Cheddar cheese
 2 tablespoons butter
 2 cloves garlic, sliced
 2 portobello mushroom caps, sliced
 4 (10 inch) flour tortillas
 1 tablespoon vegetable oil

Directions:
Prepare spinach according to package directions. Drain and pat dry.
Preheat oven to 350 degrees F (175 degrees C). Sprinkle 1/2 cup cheese on one side of each tortilla. Place tortillas cheese side up on baking sheets, and bake 5 minutes, or until cheese is melted.
Melt the butter in a skillet over medium heat. Stir in garlic and mushrooms, and cook about 5 minutes. Mix in spinach, and continue cooking 5 minutes. Place an equal amount of the mixture on the cheese side of each tortilla. Fold tortillas in half over the filling.
Heat oil in a separate skillet over medium heat. Place quesadillas in the skillet one at a time, and cook 3 minutes on each side, until golden brown. Cut each quesadilla into 4 wedges to serve.

Chicken Quesadillas

This is a great recipe for parties. The zesty chicken and cooked peppers are a succulent delight when mixed with the melted cheeses. Cut the quesadillas into wedges and serve with sour cream and salsa.

Ingredients:
 1 pound skinless, boneless chicken breast, diced
 1 (1.27 ounce) packet fajita seasoning
 1 tablespoon vegetable oil
 2 green bell peppers, chopped
 2 red bell peppers, chopped
 1 onion, chopped
 10 (10 inch) flour tortillas
 1 (8 ounce) package shredded Cheddar cheese
 1 tablespoon bacon bits
 1 (8 ounce) package shredded Monterey Jack cheese

Directions:
Preheat the broiler. Grease a baking sheet.
Toss the chicken with the fajita seasoning, then spread onto the baking sheet. Place under the broiler and cook until the chicken pieces are no longer pink in the center, about 5 minutes.
Preheat oven to 350 degrees F (175 degrees C).
Heat the oil in a large saucepan over medium heat. Stir in the green bell peppers, red bell peppers, onion, and chicken. Cook and stir until the vegetables have softened, about 10 minutes.
Layer half of each tortilla with the chicken and vegetable mixture, then sprinkle with the Cheddar cheese, bacon bits, and Monterey Jack. Fold the tortillas in half and Place onto a baking sheet.
Bake quesadillas in the preheated oven until the cheeses have melted, about 10 minutes.
