BBQ Nachos

These are not the most fancy nachos, but they taste great.

Ingredients:
 20 tortilla chips
 1/4 pound smoked beef sausage
 1/2 cup Cheddar cheese
 1/4 cup barbeque sauce

Directions:
Arrange the tortilla chips on a microwave-safe platter. Shred the sausage with a cheese grater; scatter evenly over the chips; top with Cheddar cheese. Drizzle the barbeque sauce over the nachos.
Heat in the microwave until the cheese melts, 15 to 30 seconds.

Baked Nachos

Serve with sliced jalapenos and your favorite hot sauce.

Ingredients:
 1 (8 ounce) skinless, boneless chicken breast half
 1 (14.25 ounce) can refried beans
 8 ounces corn tortilla chips
 1 1/2 cups grated pepper Jack cheese
 1/4 cup chopped green onions
 1/2 cup sour cream

Directions:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x9 inch baking dish.
Place the chicken on a microwave-safe plate, cover with a paper towel, and place in a microwave oven. Cook on high power until the chicken is no longer pink and cooked through, about 10 minutes. Cool, and use a knife to shred the chicken. Set aside.
Place the refried beans in a saucepan over medium heat. Stir until thoroughly heated.
Layer half the chips, 1/2 cup cheese, and green onions on the bottom of prepared baking dish. Spoon the refried beans over the chip mixture. Sprinkle with another 1/2 cup cheese, and spread with the sour cream. Arrange the shredded chicken over the sour cream layer. Top with the remaining chips and 1/2 cup cheese.
Bake in preheated oven until the cheese melts throughout, 15 to 18 minutes.

Italian Nachos

Tired of cheese dip nachos? Try this unique version of Italian Nachos. Quick, easy, and yummy!

Ingredients:
 4 pita bread rounds
 1/2 cup marinara sauce
 1/4 cup grated Parmesan cheese
 1 (3.25 ounce) can sliced black olives
 1/4 cup shredded mozzarella cheese
 1 clove garlic, minced
 1 cup fresh basil leaves

Directions:
Preheat the oven to 350 degrees F (175 degrees C).
Use scissors or kitchen shears to cut the pita breads in half, then into triangles. Peel apart the bread halves to make as many triangles as possible. Spread the triangles out on a large baking sheet, and sprinkle with Parmesan cheese.
Toast triangles for 10 to 15 minutes in the preheated oven, until lightly browned and crispy. While toasting, combine the marinara sauce and garlic in a small saucepan. Cook over medium heat until hot.
Transfer pita chips to a serving platter, sprinkle with olives, and pour sauce over them. Quickly cover with shredded mozzarella cheese, and whole basil leaves. Serve immediately.

Shrimp and Jalapeno Nachos

What better way to 'fiesta' than with this beautiful plate of alternative nachos? This will make a very delicious change of pace to the traditional version. Each nacho is separate from the next so you don't end up with a plate containing one giant nacho that you have to pull apart.

Ingredients:
 1/2 cup sour cream
 1/2 avocado, peeled and pitted
 1/2 lemon, juiced
 1 pound small Gulf shrimp (50 to 60 per pound), thawed and drained
 1 tablespoon vegetable oil
 1/4 teaspoon ground dried chipotle pepper
 salt and ground black pepper to taste
 1 pinch cayenne pepper, or to taste
 50 large (restaurant-style) tortilla chips, or as needed
 2 jalapeno peppers, seeded and very thinly sliced
 3 1/2 cups shredded pepperjack cheese, or as needed
 15 cherry tomatoes, sliced - or as needed
 1/4 cup chopped fresh cilantro

Directions:
Combine sour cream, avocado, and lemon juice in a blender or food processor; blend until smooth and creamy. Transfer into a plastic decorating bottle with a long tip. Refrigerate avocado-cream sauce until needed.
Place shrimp into a bowl; combine with vegetable oil, ground chipotle pepper, salt, black pepper, and cayenne pepper.
Place a large nonstick pan over high heat. Cook shrimp in the hot pan in a single layer until barely cooked through and pink, about 1 minute per side. Transfer to a plate and let shrimp cool.
Preheat the oven's broiler. Line a baking sheet with aluminum foil and lightly grease the foil.
Lay tortilla chips onto the prepared baking sheet in a single layer. Place 1 shrimp onto each chip. Add 1 slice jalapeno and 1 large pinch pepperjack cheese on top of each shrimp.
Broil under preheated broiler until cheese is melted and chips are lightly toasted, about 1 minute. Watch carefully; chips will burn quickly.
Remove nachos from baking sheet and arrange onto a serving platter; drizzle with avocado-cream sauce and sprinkle with cherry tomatoes and cilantro before serving.

Note:
You can use any cheese you want; you are the boss of your cheese choices!
You can substitute avocado-cream sauce with chopped avocado and a few dollops of sour cream if you like.

Turkey Nacho Bake

A fast and easy way to prepare a pretty classic nacho treat, with ground, browned turkey meat. Serve with sour cream, taco sauce, salsa or guacamole.

Ingredients:
 1 pound ground turkey
 2 cloves garlic, chopped
 freshly ground black pepper to taste
 2 teaspoons crushed red pepper flakes
 2 tablespoons chopped fresh chives
 2 tablespoons hot sauce (optional)
 1 (1 ounce) package dry taco seasoning mix
 1 (14 ounce) can refried beans
 1 (14.5 ounce) package tortilla chips
 2 cups shredded Cheddar cheese
 1 (4 ounce) can sliced black olives
 1 ripe tomato, diced
 1 bunch green onions, sliced

Directions:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet over medium heat, begin to brown the ground turkey. Stir in garlic, pepper, 1 teaspoon red pepper flakes, and 1 tablespoon chives. Stir in 1 tablespoon hot sauce. When the turkey is browned, stir in taco seasoning mix according to package instructions.
Pour the beans into a microwave safe bowl, and heat in the microwave until softened. Stir in 1 tablespoon chives and 1 tablespoon hot sauce.
Spread the tortilla chips across the bottom of a baking sheet. Spoon the beans mixture over the chips. Then spread the turkey mixture across the top. Sprinkle cheese, then olives, tomatoes, green onions, and remaining 1 teaspoon of crushed red pepper flakes over the top.
Bake in preheated oven until cheese is melted, about 15 minutes.

Baked Tortilla Chips

Tasty baked tortilla chips you make at home that are much better than store bought chips. Serve with your choice of salsas and garnishes.

Ingredients:
 1 (12 ounce) package corn tortillas
 1 tablespoon vegetable oil
 3 tablespoons lime juice
 1 teaspoon ground cumin
 1 teaspoon chili powder
 1 teaspoon salt

Directions:
Preheat oven to 350 degrees F (175 degrees C).
Cut each tortilla into 8 chip sized wedges and arrange the wedges in a single layer on a cookie sheet.
In a mister, combine the oil and lime juice. Mix well and spray each tortilla wedge until slightly moist.
Combine the cumin, chili powder and salt in a small bowl and sprinkle on the chips.
Bake for about 7 minutes. Rotate the pan and bake for another 8 minutes or until the chips are crisp, but not too brown. Serve with salsas, garnishes or guacamole.

Popcorn Nachos

Mexican-style spices and shredded Cheddar cheese are lively additions to plain popcorn.

Ingredients:
 1/2 cup butter, melted
 1 teaspoon crushed red pepper
 1 teaspoon ground cumin
 1 teaspoon paprika
 1 gallon popped popcorn
 1/2 cup shredded Cheddar cheese

Directions:
In a small bowl, mix together butter, crushed red pepper, cumin and paprika.
Place popcorn in a large bowl. Sprinkle with the butter mixture and Cheddar cheese. Toss until well mixed.
