Cuban Pork Tenderloin

When you can't or don't want to roast a whole pig, this elegant version is great for small dinner parties or picnics.

Ingredients:
1/2 cup fresh orange juice
1/4 cup fresh lime juice
1/4 cup dark rum
1 medium Spanish onion, thinly sliced
6 garlic cloves, minced
2 teaspoons dried oregano
2 teaspoons ground cumin
2 teaspoons salt
1 bay leaf, crumbled
1/2 teaspoon ground black pepper
48 ounces pork tenderloin

Directions:
Mix all ingredients in large resealable plastic bag.
Add pork to marinade.
Close bag and turn pork to coat. Refrigerate overnight, turning pork once.
Preheat Grill or Oven to 400°F
Transfer pork to baking pan or grill discarding the marinade.
Roast until thermometer inserted into center of pork registers 150°F
Let pork stand 5 minutes then cut crosswise into 1/2-inch-thick slices.

Mojito Chicken

Here is just the chicken for those who want a simpler recipe. We use boneless skinless chicken breasts but use whatever you like. This marinade is enough for one whole chicken cut up or 8 pieces. I have included the weight just to give you an idea. Of course, it will weigh more if the pieces have bones.

Ingredients:
3 -4 lbs chicken or 2 -3 lbs boneless skinless chicken breasts
Marinade:
1/2 cup rum
1/2 cup mint, chopped
1/2 cup fresh lime juice
1 tablespoon lime zest (optional)
1/4 cup sugar
1 jalapeno pepper, seeded and minced
1 teaspoon cayenne
2 garlic cloves, minced
1/2 cup onion, diced
2 tablespoons cumin (We love cumin but if you are not cumin crazy, reduce it by half)
1/2 teaspoon cinnamon

Directions:
Combine ALL marinade ingredients together in a blender; blend until smooth.
Pour into a zipper seal bag.
Add chicken breasts and allow to marinade in refrigerator for 2-4 hours.
Discard marinade after that time.
At this point the chicken may either be roasted in the oven at 425 F or cooked on a grill.
Cook just until meat is no longer pink in middle, about 20 minutes; turn once during cooking.
Note: Feel free to adjust seasonings to your liking. Amount of hot pepper can be increased or omitted if you prefer.

Cuban Garlic Chicken

This is straight from Havana, from a restaurant called "Gladys' House". Adapted from a recipe printed in the Chicago Tribune. You can find bottled sour orange juice in Hispanic markets or well-stocked Hispanic aisles in your local grocery store. Cook/prepare time includes marination time of one hour.

Ingredients:
6 -8 lbs whole chickens (2 3-4 lb. chicken, cut into pieces)
12 garlic cloves, coarsely chopped
1 cup sour orange juice (or 1/2 cup orange juice mixed with 1/2 cup lime juice)
1 tablespoon salt
1 tablespoon white vinegar
1 teaspoon fresh ground pepper
1 teaspoon dried oregano
1 teaspoon ground cumin

Directions:
Place the chicken in a container large enough to hold all the pieces (I used an extra-large zip-loc bag).
Combine the garlic, sour orange juice, salt, vinegar, pepper, oregano and cumin in a small bowl. pour the marinade evenly over the chicken; cover chicken (or close bag and smush it around); refrigerate at least 1 hour or overnight.
Heat oven to 450°. Arrange chicken in one layer in a roasting pan; pour the marinade evenly over the top of the chicken.
Roast the chicken in the lower third of the oven, stirring during the last 10 minutes to coat with the sauce, until it is cooked through and the sauce begins to caramelize, 45 minutes to 1 hour.
Remove the chicken to a platter, spoon garlic sauce over the pieces.

Pasteles De Guayaba (Guava and Cream Cheese Pastries)

These pastries are wonderful with a café con leche!! They are a special treat that are allowed to have on occasion for breakfast.

Ingredients:
1 lb cream cheese
1 lb butter (softened)
1 lb flour
1 1/2 lbs guava paste
sugar, for sprinkling

Directions:
Blend the cream cheese, butter and flour until well mixed; Wrap in plastic wrap and refrigerate for at least 30 minutes.
Preheat oven to 375 degrees F.
Roll out the dough into a 1/4-inch thick square; Cut the rolled dough into 16 to 20 squares.
A little off center of each square, place 1 tablespoon guava paste.
Fold the dough over the guava paste, forming a triangle; Press the edges shut.
Place the pasteles onto a cookie sheet and sprinkle them with a thin layer of sugar.
Bake until the pasteles are evenly browned, about 25 minutes.

Garlic-Onion Dinner Muffins

This muffin makes a perfect bread accompaniment for steaks and roast. The recipe comes from " A taste of Cuba".

Ingredients:
2 cups flour
3 teaspoons baking powder
1 teaspoon salt
2 tablespoons sugar
1 egg, beaten
1 cup milk
1/4 cup melted butter
2 garlic cloves, minced
1 medium onion, diced

Directions:
Heat oven to 400°F.
In a large bowl, mix flour, baking powder, salt and sugar.
In a small bowl, mix together egg, milk, garlic and onion.
Make a well in the center of dry ingredients and pour in the egg mixture and melted butter.
Mix together using as few strokes as possible.
DO NOT OVER BEAT--the batter should have small lumps in it.
Pour into 12 paper-lined muffins tins, filling about 2/3 full.
Bake 20 minutes or until muffins begin to turn golden on top.
Test for doneness with a toothpick which should come out clean.
Remove from tins and cool slightly before serving.

Pineapple Mango Daiquiri

Sweet tropical drink!

Ingredients:
 2 (1.5 fluid ounce) jiggers mango nectar
 1 (1.5 fluid ounce) jigger pineapple juice
 1 (1.5 fluid ounce) jigger rum
 1 (1.5 fluid ounce) jigger triple sec
 1/2 lime, juiced
 2 cups ice cubes, or as desired

Directions:
Pour mango nectar, pineapple juice, rum, triple sec, and lime juice into a blender and pulse once or twice to combine. Add ice cubes and blend until drink is slushy and no ice chunks remain, 1 to 2 minutes. Serve in a glass with additional ice if desired.

Toasted Cuban Sandwich

This Cuban sandwich is piled high with ham, roast pork loin, Swiss cheese, and dill pickles, then toasted to warm and crunchy perfection.

Ingredients:
Chipotle Mayonnaise:
 1 1/2 cups mayonnaise
 1/2 cup sour cream
 1/4 cup chopped fresh cilantro
 1/4 cup diced green onions
 1 1/2 tablespoons ground chipotle peppers
 1 tablespoon lime juice
 1 tablespoon garlic basil spread (see footnote for recipe link)
 1 teaspoon ground cumin
 salt and ground black pepper to taste

Fillings:
 2 tablespoons olive oil
 2 sweet onions, sliced
 1 teaspoon red pepper flakes
 1 teaspoon dried oregano
 2 jalapeno peppers cut into rings, divided
 4 ciabatta sandwich rolls, sliced horizontally
 1/4 cup sweet hot mustard, divided
 1/2 pound sliced Swiss cheese, divided
 1/2 pound sliced deli roast pork loin, divided
 1/2 pound sliced ham, divided
 2 dill pickles, cut into strips lengthwise - divided

Directions:
Combine mayonnaise, sour cream, cilantro, green onions, ground chipotle peppers, lime juice, garlic basil spread, cumin, salt, and black pepper in a small bowl. Stir until combined. Cover and refrigerate for at least 1 hour.
Preheat oven to 500 degrees F (260 degrees C).
Heat olive oil in large skillet over medium-high heat. Stir onions, red pepper flakes, and oregano in the hot oil until onions begin to soften, about 5 minutes. Season with salt and ground black pepper to taste. Add half the jalapeno pepper rings and cook until they begin to soften, 2 to 3 minutes. Reserve remaining jalapeno rings.
Spread each ciabatta roll with 1 tablespoon sweet hot mustard and 2 tablespoons chipotle mayonnaise. Evenly divide the Swiss cheese slices, slices of pork loin, ham, dill pickles, and remaining jalapeno rings among the four sandwiches. Top with cooked onion mixture.
Place sandwiches onto a baking sheet and bake in the preheated oven until cheese is melted and bread is toasted and warm, 4 to 5 minutes.

Pasteles De Coco (Coconut Pastries)

For optimum quality, enjoy these pastries shortly after cooling, or on the same day they're baked.

Ingredients:
 1 (17.25 ounce) package frozen puff pastry (2 sheets), thawed
 1 (15.5 ounce) can canned grated coconut in syrup

Directions:
Preheat oven to 425 degrees F (220 degrees C). Cover a baking sheet with parchment paper.
Roll out each sheet of pastry dough slightly, just to thin it. Cut each sheet into 12 squares, and place half the squares on the prepared baking sheet, leaving at least half an inch between each square.
Place a spoonful of coconut in the center of each pastry square, then top with a second pastry square. Pinch the dough on two sides to seal in the coconut filling.
Bake pastries in preheated oven until golden brown, 10 to 20 minutes. Cool on a rack.

Boliche (Cuban Pot Roast)

A Cuban style pot roast recipe that is generally used at the fire house.

Ingredients:
 4 pounds beef eye of round roast
 2 (4 ounce) links chorize sausage, cut into pieces
 6 cloves garlic
 1/2 teaspoon dried oregano
 1/8 teaspoon paprika
 salt and ground black pepper to taste
 1/2 cup orange juice
 1/4 cup lime juice
 1/4 cup lemon juice
 1/2 cup olive oil
 2 large onions, thickly sliced
 2 bay leaves, crumbled
 1 cup dry sherry
 3 cups beef broth, or more if needed
 4 potatoes, peeled and halved

Directions:
Lay the eye of round roast on your work surface. Use the tip of a sharp boning or paring knife to cut a pocket by inserting the knife all the way through the center of the roast, beginning on the flat side. Rotate the blade 90 degrees and insert the knife in the same spot, creating an cross shape that extends through the roast. Stuff the chorizo pieces into the pocket. Using the same knife, pierce the roast all over. Set aside.
Mash garlic and oregano with a mortar and pestle to create a paste. Rub paste all over the roast, then season with paprika, salt, and pepper. Pour the orange juice, lime juice, and lemon juice over the roast. Cover with plastic wrap and marinate in the refrigerator for at least 3 hours, or overnight. Remove the roast from the marinade, and shake off excess. Reserve marinade.
Heat a large Dutch oven over medium heat. Place the roast in the Dutch oven and brown on all sides, about 10 minutes. Remove roast to a platter, and set aside. Stir in the onions; cook and stir until the onion has softened and turned translucent, about 5 minutes. Return the roast to the pot. Add the bay leaves, sherry, beef broth, and reserved marinade. Increase heat to medium-high, bring to a boil, then cover and reduce heat to low; simmer 2 hours.
Drop potatoes into the pot, cover, and continue to simmer until potatoes are tender and easily pierced with a fork, about 30 minutes more, adding additional beef broth as needed.
Remove the roast and place on a platter. Cover the meat with two layers of aluminum foil, and allow to rest in a warm area for 10 minutes. Slice roast into 1/2-inch thick slices, and arrange potatoes on the platter. Spoon the remaining sauce over, and serve.

Cuban Mango Mousse

Fluffy, rich, and delicious, this mousse is a perfectly sweet, authentic Cuban dessert!

Ingredients:
 2 medium mangoes, peeled and cubed
 2 1/2 tablespoons honey
 2 tablespoons fresh lime juice
 1 1/4 cups heavy cream
 2 egg whites

Directions:
Puree the mangoes, honey, and lime juice in a blender or food processor until smooth. Whip the heavy cream to soft peaks, and fold into the mango puree. Beat egg whites in a clean dry bowl until stiff, then stir half into the mango mixture. When well blended, gently fold the remaining egg white into the mousse until no streaks remain.

Avocado-Lime Shrimp Salad (Ensalada de Camarones con Aguacate y Limon)

This easy shrimp salad contains no lettuce. It's perfect for barbeques or as a 'change of pace' dinner side dish. Customize this recipe with your favorite salad dressing in place of the lime juice. The lime gives it a tiny tangy kick.

Ingredients:
 1 1/4 pounds cooked deveined shelled shrimp, tail shells removed
 3 avocados - peeled, pitted and diced
 1 bunch green onion tops, chopped
 3 large red tomatoes, diced
 1 large yellow tomato, diced
 1 bell pepper (any color), chopped
 1/2 bunch cilantro, chopped
 2 tablespoons fresh lime juice
 salt and ground black pepper to taste

Directions:
Cut the shrimp into 2 or 3 pieces and place in a large bowl; add the avocado, green onion, red and yellow tomatoes, bell pepper, cilantro, and lime juice; mix. Season with salt and pepper. Refrigerate at least 15 minutes before serving.

Mojo Roast Chicken (Pollo Asado)

Mojo-marinated roast chicken! Serve with white rice, which is the traditional way. It's also great with mashed potatoes or in sandwiches with Cuban bread or fresh rolls. You can use half the mojo recipe for a smaller bird, drumsticks, or thighs.

Ingredients:
 1/2 cup extra-virgin olive oil
 1 1/2 teaspoons ground cumin
 1 1/2 teaspoons kosher salt
 1/2 teaspoon dried oregano
 2 tablespoons minced garlic
 3 tablespoons lime juice
 3 tablespoons orange juice
 1 (6 pound) whole chicken, cut into pieces

Directions:
Heat the olive oil in a small saucepan over medium-high heat until very hot. While the oil heats, mash the cumin, salt, oregano, and garlic together into a paste in a heat-proof bowl; whisk the hot oil into the paste. Allow the mixture to cool slightly. Add the lime juice and orange juice; stir. Place the chicken in a large sealable bag; pour the marinade over the chicken and shake to assure an even coating. Refrigerate at least 4 hours, up to overnight.
Preheat an oven to 375 degrees F (190 degrees C). Arrange the marinated chicken in a roasting pan.
Bake the chicken in the preheated oven until no longer pink at the bone and the juices run clear, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C).

Arroz con Leche

This Arroz con Leche is the Cuban version of rice pudding. It's richer and sweeter than regular rice pudding. Before serving, sprinkle with cinnamon or garnish with a cinnamon stick, for flair.

Ingredients:
 2 1/4 cups water
 1 1/2 cups short grain rice
 1 (1/4 inch x 3 inch) strip lime peel
 1/2 cup water
 1 cinnamon stick
 2 tablespoons anise seed, crushed
 1 (12 ounce) can evaporated milk
 1 (14 ounce) can condensed milk
 1 tablespoon vanilla extract
 1/4 teaspoon salt
 3/4 cup raisins (optional)

Directions:
Combine 2 1/4 cups of water, rice, and lime peel in a saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low, cover, and simmer for 20 minutes until the rice is tender.
While the rice is cooking, combine 1/2 cup of water, the cinnamon stick, and anise in another saucepan over medium-high heat. Bring mixture to a low boil for 3 minutes, then remove saucepan from stove. Strain flavored water into a bowl and set aside, discarding cinnamon stick and anise pieces.
After rice has simmered for 20 minutes, carefully remove the lime peel with a slotted spoon, and over low heat, gradually stir evaporated milk and condensed milk into the rice. Mix in the cinnamon and anise-flavored water, vanilla, and salt. Add raisins, if desired. Continue to stir until the mixture thickens, about 7 to 10 minutes.
If the pudding is too watery after 10 minutes, turn up heat to medium-low and stir continuously. When pudding reaches desired consistency, remove from heat and pour into individual dishes, or a large bowl. Store in the refrigerator until ready to serve.

Spicy Cuban Mojo Chicken with Mango-Avocado Salsa

A tasty, authentic Cuban dish to enjoy!!!

Ingredients:
 1 teaspoon cumin seed
 3 cloves garlic, chopped
 1 fresh red chile pepper, chopped
 1/4 teaspoon salt
 2 tablespoons olive oil
 5 teaspoons orange juice
 5 teaspoons lemon juice
 2 (8 ounce) boneless, skinless chicken breast halves
 2 tablespoons olive oil
 1/2 cup orange juice
 1 teaspoon lime zest
 1 teaspoon honey
 1 teaspoon sweet soy sauce
 1/4 cup cold, unsalted butter, cut into pieces
 1/2 cup diced mango
 1/2 avocado
 chopped fresh cilantro to taste
 chopped fresh parsley to taste

Directions:
Toast the cumin seeds in a dry skillet over medium-high heat until fragrant, about 2 minutes. Place the cumin seeds, garlic, chile pepper, salt, olive oil, orange juice, and lemon juice into the bowl of a blender; grind to a coarse paste. Toss the chicken with the marinade, then place into the refrigerator, and allow to marinate for about 2 1/2 hours.
Preheat oven to 350 degrees F (175 degrees C).
Heat a skillet over medium-high heat. Cook the chicken for 2 to 3 minutes on each side until browned. Place into the oven, and cook until the juices run clear, about 8 minutes. When the chicken is done, remove, cover with foil, and allow to rest for 3 to 5 minutes.
While the chicken is in the oven, whisk together the olive oil, orange juice, lime zest, honey, and soy sauce in a skillet over medium-high heat. Simmer until the orange juice has reduced to 1/3 of original volume and is beginning to get thick and syrupy. Once thick, remove from heat, and whisk in the butter pieces one at a time until melted; set aside.
To serve, place chicken on the plate and sprinkle with mango and avocado. Drizzle with the sauce, and garnish with cilantro and parsley.

Cuban Pork Roast

Black beans and rice are the logical accompaniment to this hearty pork roast. A salad of orange slices, red onion and arugula dressed with a tangy cilantro vinaigrette would be refreshing. If there are any leftovers, make media noches, the Cuban sandwiches that are made with Swiss cheese, ham and toasted egg bread in addition to roast pork.

Ingredients:
 2 teaspoons cumin seeds
 1/2 teaspoon whole black peppercorns
 4 cloves garlic, chopped
 2 teaspoons salt
 1 teaspoon dried oregano
 1/3 cup orange juice
 1/3 cup dry sherry
 3 tablespoons lemon juice
 3 tablespoons fresh lime juice
 2 tablespoons olive oil
 4 pounds pork shoulder, trimmed and tied

Directions:
Heat a small, heavy skillet over medium heat. Add the cumin seeds and peppercorns to the pan; stir constantly until fragrant and beginning to brown, about 2 minutes. Cool.
Using a mortar and pestle, crush toasted spices with garlic, salt, and oregano to make a paste. You can also do this in the small bowl of a food processor. Transfer to a small bowl, and stir in orange juice, lime juice, lemon juice, sherry, and olive oil.
Place the pork in a large resealable plastic bag. Pour citrus marinade over meat, and seal. Refrigerate for 12 to 24 hours, turning the bag over occasionally.
Preheat the oven to 325 degrees F (165 degrees C).
Transfer pork and marinade to a roasting pan, and place in the oven. Roast for about 2 1/2 hours, basting with pan juices occasionally, or until an instant read thermometer inserted in the center reads 145 degrees F (63 degrees C). Add small amounts of water to the pan if it dries out. Transfer the pork to a carving board, cover loosely with foil, and let rest for 15 minutes. Carve, and serve.

Classic Cuban Midnight (Medianoche) Sandwich

This is one of the more famous sandwiches straight out of the island of Cuba. This recipe came from my uncle who used to work at a restaurant in Pinar del Rio, Cuba and now works at a Cuban cafeteria here in Miami. This sandwich is best served with fried plantain chips and a cold mamey milkshake!

Ingredients:
 4 sweet bread rolls
 1/2 cup mayonnaise
 1/4 cup prepared mustard
 1 pound thinly sliced cooked ham
 1 pound thinly sliced fully cooked pork
 1 pound sliced Swiss cheese
 1 cup dill pickle slices
 2 tablespoons butter, melted

Directions:
Split the sandwich rolls in half, and spread mustard and mayonnaise liberally onto the cut sides. On each sandwich, place and equal amount of Swiss cheese, ham and pork in exactly that order. Place a few pickles onto each one, and put the top of the roll onto the sandwich. Brush the tops with melted butter.
Press each sandwich in a sandwich press heated to medium-high heat. If a sandwich press is not available, use a large skillet over medium-high heat, and press the sandwiches down using a sturdy plate or skillet. Some indoor grills may be good for this also. Cook for 5 to 8 minutes, keeping sandwiches pressed. If using a skillet, you may want to flip them once for even browning. Slice diagonally and serve hot.

Cuban Beef Stew

The traditional dish uses a good amount of olive oil and meat with a lot of marbling. This version is lower in fat, but is true to the spirit of the recipe. Although it does take a fair amount of time, it is not difficult to make.

Ingredients:
 2 tablespoons olive oil
 1 onion, chopped
 4 cloves garlic, minced
 1 red bell pepper, chopped
 1 1/2 pounds sirloin tips, cubed
 2 bay leaves
 1/2 teaspoon ground cumin
 1 teaspoon dried oregano
 1/2 cup dry sherry
 1 (8 ounce) can tomato sauce
 2 tablespoons red wine vinegar
 1/4 cup pimento-stuffed green olives
 1/4 cup raisins
 2 tablespoons capers
 4 potatoes, peeled and quartered
 salt and pepper to taste

Directions:
In a large saute pan, heat oil over medium heat. Cook onion and garlic in oil, stirring frequently, until transparent. Stir in cubed meat, and cook until browned. Stir in red bell pepper, bay leaf, cumin, and oregano; cook for 2 to 3 minutes.
Stir in sherry, tomato sauce, vinegar, olives, raisins, and capers. Pour in enough water to just cover meat. Bring to boil, reduce heat to low, and cover. Simmer until fork tender, about 1 1/2 hours. Add more water if the stew becomes too thick.
Stir potatoes into the stew. Season with salt and pepper to taste. Cook, covered, until potatoes are almost tender. Uncover, and cook until done.

Sea Bass Cuban Style

Easy to prepare - sure to please. Great dish for guests when you have little time (or desire) to slave all day in the kitchen.

Ingredients:
 2 tablespoons extra virgin olive oil
 1 1/2 cups thinly sliced white onions
 2 tablespoons minced garlic
 4 cups seeded, chopped plum tomatoes
 1 1/2 cups dry white wine
 2/3 cup sliced stuffed green olives
 1/4 cup drained capers
 1/8 teaspoon red pepper flakes
 4 (6 ounce) fillets sea bass
 2 tablespoons butter
 1/4 cup chopped fresh cilantro

Directions:
Heat oil in a large skillet over medium heat. Saute onions until soft. Stir in garlic, and saute about 1 minute. Add tomatoes, and cook until they begin to soften. Stir in wine, olives, capers, and red pepper flakes. Heat to a simmer.
Place sea bass into sauce. Cover, and gently simmer for 10 to 12 minutes, or until fish flakes easily with a fork. Transfer fish to a serving plate, and keep warm.
Increase the heat, and add butter to sauce. Simmer until the sauce thickens. Stir in cilantro. Serve sauce over fish.
