Escabeche

Escabeche -

INGREDIENTS:

4-5 pieces Hasa-Hasa (Short-bodied Mackerel)  or 1 piece Apahap (Barramundi) or Tilapia - Fried
1/2 cup vinegar
1 cup water
1/2 cup sugar
1 tsp salt
3 cloves garlic, minced
1 medium onion, sliced
2 thumb size ginger, strips
1 yellow/red bell pepper, strips (optional)
1/3 tsp yellow powder
cooking oil

DIRECTIONS:

Fry fish and set aside.
Mix water, vinegar, sugar and salt. Set aside.
In a pan or wok, saute ginger, garlic and onion.
Add vinegar mixture. Do not stir. Bring to a boil.
When boiling, add yellow powder, fried fish and bell pepper. Simmer for 5 minutes.
Serve with hot rice. Enjoy!
