Pine-Chicken Curry

Pine-Chicken Curry-

INGREDIENTS:

1 1/2 lbs chicken (cut into serving pieces)
3 cloves garlic (minced)
1 onion (sliced)
1 large potato (cut into chunks)
1 small can pineapple chunks
1 can (13.5 oz) coconut milk
1/2 cup water
2 Tbsp Fish Sauce (Patis)
2 tbsp curry powder
coking oil

DIRECTIONS:

Rub chicken with curry powder. Let stand for at 10 minutes.
Heat pan with cooking oil. Saute garlic and onion.
Add the chicken and fish sauce to taste. Cook for 5 minutes with constant stirring.
Add the water and coconut milk. Simmer for 15 minutes or until the chicken is cooked.
Add potatoes and cook for another 10 minutes.
Add the pineapple chunks. Simmer once.
Remove from heat.
Serve hot. Enjoy!
